Scottish lobster, seared with salad of west coast crab, rose-hips from Tyresö, lovage, cauliflower and carrot juice

Duck from Hagby farm, pepper fried duck breast and tureen with creamy baked egg
from Sanda poultry farm, crispy French toast, Risungsgård’s truffle from Gotland
and rapeseed tartar

Rabbit steak from Vreta gård from Västerås, roasted with steak sauce, spice marinated

flamed plums from the Östman family, hazelnut ice cream and small pancakes

Sea buckthorn from Dals Långed, sorbet of sea buckthorn juice with cream of cloudberries
from Jämtland, licorice ice cream, freshly baked fudge cookies and swelled sugar
